Chicken and Broccoli Baked Alfredo
Ingredients:
For the Chicken:
2 large chicken breasts, cooked and diced (or use rotisserie chicken)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
For the Broccoli:
2 cups broccoli florets, steamed until tender
For the Alfredo Sauce:
4 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1 cup whole milk
1 cup grated Parmesan cheese
1/2 teaspoon dried Italian seasoning
Salt and pepper to taste
For the Baked Dish:
3 cups cooked pasta (penne, rotini, or ziti works well)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional, for garnish)
Directions:
Prepare the Chicken:
Season the diced chicken breasts with garlic powder, onion powder, salt, and pepper.
Heat olive oil in a skillet over medium heat. Cook the chicken until fully cooked and golden brown, about 5-7 minutes. Set aside.
Prepare the Broccoli:
Steam the broccoli florets until tender, about 3-5 minutes. Set aside.
Make the Alfredo Sauce:
In a large saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Pour in the heavy cream and milk, stirring constantly. Bring to a simmer.
Gradually add the grated Parmesan cheese, stirring until melted and the sauce is smooth.
Season with Italian seasoning, salt, and pepper. Continue to cook until the sauce thickens slightly, about 5 minutes.
Combine Ingredients:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cooked pasta, chicken, broccoli, and Alfredo sauce. Mix well to coat everything evenly.
Assemble and Bake:
Transfer the mixture to a baking dish (9×13-inch works well).
Sprinkle shredded mozzarella cheese and additional Parmesan cheese evenly over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the top is golden brown.
Garnish and Serve:
Garnish with chopped fresh parsley if desired. Serve warm.
