Chicken and Bacon Fried Rice Recipe
Ingredients:
2 cups cooked rice (preferably day-old)
1 cup cooked chicken, diced or shredded
1/2 cup cooked bacon, crumbled
2 tablespoons vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots, thawed
2 eggs, lightly beaten
3 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
Salt and pepper, to taste
2 green onions, chopped (for garnish)
Instructions:
Prepare the Rice:
If using freshly cooked rice, spread it out on a baking sheet and allow it to cool completely before using. This helps prevent the rice from becoming mushy.
Cook the Aromatics:
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
Add the Vegetables:
Add the thawed peas and carrots to the skillet and cook for 2-3 minutes, until heated through.
Cook the Eggs:
Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
Combine Ingredients:
Add the cooked rice, diced chicken, and crumbled bacon to the skillet. Stir to combine all ingredients evenly.
Season the Fried Rice:
Pour the soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Stir well to coat everything evenly. Cook for another 2-3 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
Serve:
Remove from heat and garnish with chopped green onions. Serve hot and enjoy!
