Chewy Snickerdoodle Cookie Bars
A soft, chewy, cinnamon-sugar treat in bar form — the perfect dessert for snickerdoodle lovers!
Ingredients:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
For the Cinnamon Sugar Topping:
2 tbsp granulated sugar
1 tsp ground cinnamon
Instructions:
Preheat oven:
Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
Mix the dry ingredients:
In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream the butter and sugar:
In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
Add the egg and vanilla:
Beat in the egg and vanilla extract until combined.
Incorporate the dry ingredients:
Gradually add the flour mixture to the wet ingredients, mixing until just combined.
Spread the dough:
Press the cookie dough into the prepared baking pan in an even layer.
Make the cinnamon sugar topping:
In a small bowl, mix the granulated sugar and cinnamon. Sprinkle the cinnamon sugar evenly over the top of the dough.
Bake:
Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Cool and cut:
Let the bars cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.

For an extra soft texture, don’t overmix the dough.
You can add a pinch of cream of tartar to enhance the snickerdoodle flavor.
If you prefer thicker bars, use a smaller baking pan (like a 7×7-inch pan) and bake for a slightly longer time.
