Cheesy Zucchini Breadsticks
Ingredients:
2 cups grated zucchini (about 1 medium zucchini)
1/2 teaspoon salt
1 cup all-purpose flour
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 large egg
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon baking powder
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions:
1. Prepare the Zucchini:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. You should have about 1 cup of squeezed zucchini.
2. Make the Dough:
In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, mozzarella cheese, egg, oregano, basil, garlic powder, pepper, and baking powder. Mix until well combined. The mixture should be thick and slightly sticky.
3. Spread the Dough:
Transfer the dough to the prepared baking sheet. Using a spatula or your hands, spread the dough into a rectangle, about 1/2 inch thick.
4. Bake:
Bake in the preheated oven for 20-25 minutes, or until the breadsticks are golden brown and cooked through.
5. Cut and Garnish:
Remove from the oven and let cool slightly. Use a pizza cutter or knife to cut into breadsticks.
Garnish with chopped fresh parsley if desired.
6. Serve:
Serve warm or at room temperature. These breadsticks are great on their own or with a marinara dipping sauce.
