🧀 Cheesy Stuffed Meatloaf Bites
Crispy outside, juicy inside, and stuffed with gooey cheese—these bite-sized meatloaf bombs are the ultimate comfort snack.
Ingredients:
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 cup ketchup
1 tablespoon mustard
Cheese cubes (cheddar, mozzarella, or your favorite melty cheese)
Optional garnish: chopped parsley, extra ketchup for dipping
Instructions:
1. Preheat Oven
Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line a baking sheet with parchment paper.
2. Make the Meat Mixture
In a large bowl, mix together:
Ground beef
Breadcrumbs
Milk
Egg
Onion
Garlic
Salt
Pepper
Worcestershire sauce
Half of the ketchup-mustard mixture (save the rest for topping)
Mix until just combined—don’t overwork the meat or it may turn out tough.
3. Shape & Stuff
Take a tablespoon-sized scoop of meat mixture and flatten slightly in your hand.
Place a cheese cube in the center and wrap the meat around it to form a sealed ball.
Repeat until all meat is used.
Tip: Keep cheese cubes small (½ inch or less) so they stay enclosed and melt perfectly.
4. Bake
Place meatloaf bites in the muffin tin or on the baking sheet.
Top each bite with a dab of the remaining ketchup-mustard mixture.
Bake for 18–22 minutes, or until meat is cooked through and cheese is melted.
5. Serve
Let cool slightly, then garnish with chopped parsley if desired.
Serve with extra ketchup, BBQ sauce, or ranch for dipping.
