Cheesy Smoked Sausage Skillet

Ingredients:
1 lb smoked sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
1 bell pepper, diced
2 cloves garlic, minced
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper, to taste
2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions:
Cook the Sausage: Heat the olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook for about 5-7 minutes until browned and slightly crispy. Remove from the skillet and set aside.
Sauté Vegetables: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté for about 3-4 minutes until softened and fragrant.
Add the Cream: Pour in the heavy cream and stir to combine. Bring to a simmer, allowing it to cook for 2-3 minutes until slightly thickened.
Melt the Cheese: Reduce the heat to low and stir in the shredded cheddar and mozzarella cheese. Continue stirring until the cheese is melted and the sauce is creamy.
Season: Add the smoked paprika, garlic powder, salt, and pepper. Taste and adjust seasonings as necessary.
Combine the Sausage: Return the cooked sausage to the skillet and stir to combine with the cheesy sauce. Let it cook for another 2-3 minutes to heat through.
Serve: Garnish with freshly chopped parsley if desired and serve hot. Enjoy with a side of rice, mashed potatoes, or crusty bread.
