Cheesy Smoked Sausage Skillet
Ingredients:
1 lb smoked sausage, sliced into rounds
1 tbsp olive oil
1 cup onion, diced
1 bell pepper (any color), diced
2 cloves garlic, minced
1 cup chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1/2 cup heavy cream (or milk for a lighter option)
1 1/2 cups uncooked pasta (penne, rotini, or your choice)
1 1/2 cups shredded cheddar cheese (or a cheese blend)
Salt and pepper, to taste
Chopped parsley for garnish (optional)
Instructions:
Sauté the Sausage:
In a large skillet, heat the olive oil over medium heat. Add the smoked sausage slices and cook for about 3-4 minutes until browned. Remove from the skillet and set aside.
Cook the Veggies:
In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
Add the Liquids and Pasta:
Pour in the chicken broth, diced tomatoes (with juice), and heavy cream. Stir to combine, then add the uncooked pasta. Bring the mixture to a simmer, cover, and cook for 12-15 minutes or until the pasta is cooked and the liquid has mostly absorbed. Stir occasionally to prevent sticking.
Add Cheese and Sausage:
Return the smoked sausage to the skillet. Sprinkle the shredded cheese over the pasta mixture and stir until the cheese is melted and everything is evenly combined. Season with salt and pepper to taste.
Garnish and Serve:
Garnish with chopped parsley if desired, and serve warm.
