Cheesy Ranch Potatoes and Sausage
Ingredients:
For the dish:
1 lb baby potatoes (quartered)
1 lb smoked sausage (sliced into rounds)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup ranch dressing
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional garnishes:
Chopped green onions or parsley
Extra shredded cheese for topping
Instructions:
Prepare the potatoes:
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
Bake the potatoes:
Spread the seasoned potatoes in a single layer on a greased or parchment-lined baking sheet.
Roast in the preheated oven for 20–25 minutes, stirring halfway through, until golden brown and tender.
Cook the sausage:
While the potatoes are roasting, heat a skillet over medium-high heat and cook the sausage slices until browned on both sides. Remove from heat and set aside.
Combine the dish:
In the same large mixing bowl used earlier, mix the roasted potatoes, browned sausage, sour cream, ranch dressing, and shredded cheddar cheese until everything is evenly coated.
Bake to finish:
Transfer the mixture to a greased 9×13-inch baking dish.
Sprinkle extra cheese on top, if desired.
Bake at 400°F (200°C) for 10–15 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with chopped green onions or parsley for added freshness. Serve warm and enjoy!
