Cheesy Ranch Baked Potatoes

Cheesy Ranch Baked Potatoes

Ingredients:
4 medium-sized russet potatoes
1/2 cup ranch dressing
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tbsp unsalted butter, melted
1/4 cup chopped green onions (optional)
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper, to taste
Fresh parsley for garnish (optional)

Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Potatoes:
Scrub the potatoes thoroughly and pat them dry. Slice each potato into 1/4-inch thick rounds, keeping the slices together as much as possible.
Season the Potatoes:
Place the sliced potatoes on the prepared baking sheet. Brush each potato with melted butter, making sure to get between the slices. Sprinkle garlic powder, onion powder, salt, and pepper over the potatoes.
Bake the Potatoes:
Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender and lightly browned on the edges.
Add the Ranch and Cheese:
Remove the potatoes from the oven. Carefully pour the ranch dressing over the potatoes, ensuring it seeps between the slices. Then, sprinkle the shredded cheddar, mozzarella, and Parmesan cheeses evenly over the top.
Bake Again:
Return the potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.
Garnish and Serve:
Once the potatoes are done, remove them from the oven. Sprinkle chopped green onions and fresh parsley (if using) over the top. Serve hot as a side dish or a hearty snack.
