Ingredients:
1 (32 oz) bag frozen hash browns, thawed
1 (10.5 oz) can cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese
½ cup melted butter
½ cup chopped onion (optional)
Salt and pepper to taste
Topping:
1 cup crushed cornflakes (or crushed Ritz crackers)
¼ cup melted butter

Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Combine Ingredients:
In a large bowl, mix together the cream of chicken soup, sour cream, melted butter, shredded cheese, chopped onion, salt, and pepper until well combined.
Add the thawed hash browns and stir until everything is evenly coated.
3. Assemble the Casserole:
Spread the hash brown mixture evenly into the prepared baking dish.
4. Add Topping:
In a small bowl, combine the crushed cornflakes (or Ritz crackers) with the melted butter. Sprinkle this mixture over the casserole.
5. Bake:
Bake for 45-55 minutes, or until the casserole is bubbly and the top is golden brown.
6. Serve:
Allow to cool for a few minutes before serving. Enjoy as a hearty side or as a main!
