Ingredients:
4 cups diced potatoes (peeled)
2 cups diced ham
1 can (10.5 oz) cream of chicken soup
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup milk
1/4 cup chopped green onions
1/4 tsp garlic powder
1/4 tsp black pepper
1/2 cup crushed cornflakes or breadcrumbs (optional topping)
2 tbsp melted butter

Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Mix Ingredients: In a large bowl, combine diced potatoes, ham, cream of chicken soup, shredded cheddar cheese, sour cream, milk, green onions, garlic powder, and black pepper. Stir until well combined.
Assemble Casserole: Pour the mixture into the prepared baking dish, spreading it out evenly.
Add Topping (Optional): If desired, combine the crushed cornflakes or breadcrumbs with melted butter and sprinkle over the top of the casserole.
Bake: Bake uncovered for 45-50 minutes, or until the casserole is bubbly and the potatoes are tender. If using a topping, it should be golden and crisp.
Serve: Allow the casserole to cool slightly before serving. Garnish with extra green onions if desired.
