Cheesy Ground Beef Pasta Skillet
Ingredients:
1 lb ground beef (or ground turkey)
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper, diced (any color)
1 can (14.5 oz) diced tomatoes (with juice)
2 cups beef broth (or chicken broth)
1 cup uncooked pasta (macaroni, rotini, or penne work well)
1 teaspoon Italian seasoning
1/2 teaspoon paprika (optional)
Salt and pepper to taste
2 cups shredded cheddar cheese (or a cheese blend)
Fresh parsley or basil for garnish (optional)
Instructions:
Cook the Ground Beef:
In a large skillet over medium heat, brown the ground beef, breaking it apart with a spoon. Cook until no longer pink, about 5-7 minutes. Drain any excess fat if necessary.
Add Vegetables:
Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
Combine Ingredients:
Stir in the diced tomatoes (with their juice), beef broth, uncooked pasta, Italian seasoning, paprika (if using), salt, and pepper. Bring the mixture to a boil.
Cook the Pasta:
Once boiling, reduce the heat to a simmer. Cover the skillet and cook for about 12-15 minutes, or until the pasta is cooked al dente and most of the liquid is absorbed. Stir occasionally to prevent sticking.
Add the Cheese:
Once the pasta is cooked, remove the skillet from heat. Stir in the shredded cheese until melted and creamy. You can reserve a little cheese to sprinkle on top if desired.
Serve:
