Cheesy Fiesta Potatoes
Ingredients:
4 medium russet potatoes, peeled and diced into 1-inch cubes
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
1 1/2 cups shredded cheddar cheese
1/4 cup sour cream (optional, for topping)
2 tablespoons chopped green onions (optional, for garnish)
2 tablespoons chopped fresh cilantro (optional, for garnish)
Hot sauce (optional, for topping)
Directions:
Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Potatoes:
In a large bowl, toss the diced potatoes with olive oil, paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper until evenly coated.
Roast the Potatoes:
Spread the seasoned potatoes in an even layer on the prepared baking sheet. Roast for 25-30 minutes, turning halfway through, until the potatoes are golden brown and crispy on the outside.
Add Cheese:
Once the potatoes are done roasting, remove them from the oven. Sprinkle the shredded cheddar cheese evenly over the top of the potatoes.
Melt the Cheese:
Return the potatoes to the oven for an additional 5 minutes or until the cheese is fully melted and bubbly.
Garnish:
Remove from the oven and let cool slightly. If desired, top the cheesy fiesta potatoes with sour cream, green onions, cilantro, and a drizzle of hot sauce.
Serve:
Serve the cheesy fiesta potatoes as a side dish or a loaded snack, perfect with tacos, fajitas, or any Tex-Mex meal.
