Cheesy Cajun Alfredo Chicken

Cheesy Cajun Alfredo Chicken

Creamy Cajun-spiced linguine with tender seared chicken and three melty cheeses – pure comfort perfection!

Introduction

If you love bold flavors, creamy sauces, and restaurant-level comfort food, this Cheesy Cajun Alfredo Chicken will steal your heart instantly. This dish brings together everything we adore about Cajun cooking — smoky spices, a gentle kick of heat, and deep Louisiana-inspired flavor — and pairs it with the luscious richness of a homemade three-cheese Alfredo sauce.

Unlike store-bought Alfredo, this sauce is luxuriously creamy, silky-smooth, and layered with flavor thanks to Parmesan, mozzarella, and cream cheese. Toss that with perfectly cooked linguine and golden-seared Cajun chicken… and suddenly your kitchen feels like a cozy Italian-Cajun fusion bistro.

This recipe is easy enough for weeknights yet impressive enough for guests. It’s the kind of meal that makes people lean back in their chairs with that “oh my goodness” face after the first bite. Let’s dive into this creamy dream!

Ingredients

For the Pasta

  • 1 lb linguine pasta

  • Water + salt for boiling

For the Cajun Chicken

  • 2 large chicken breasts, sliced thin

  • 1 tbsp Cajun seasoning

  • ½ tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp black pepper

  • ½ tsp salt

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Cheesy Alfredo Sauce

  • 3 tbsp butter

  • 4 garlic cloves, minced

  • 2 cups heavy cream

  • 1 cup chicken broth

  • 4 oz cream cheese, softened

  • 1 cup grated Parmesan cheese

  • 1 cup shredded mozzarella

  • 1–2 tsp Cajun seasoning (adjust to heat level)

  • ½ tsp smoked paprika

  • Salt & pepper to taste

  • Fresh parsley (for garnish)

Directions

Step 1: Boil the Linguine

  1. Bring a large pot of salted water to a boil.

  2. Add the linguine and cook until al dente (usually 8–10 minutes).

  3. Reserve ½ cup pasta water, then drain and set aside.

Pasta Tip: Lightly drizzle the cooked linguine with olive oil to prevent sticking if it will sit for a few minutes.

Step 2: Season and Sear the Cajun Chicken

  1. In a bowl, toss your thin-sliced chicken breast with Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper.

  2. Heat olive oil and butter in a large skillet over medium-high heat.

  3. Add the seasoned chicken slices in a single layer.

  4. Cook 3–4 minutes per side until golden and cooked through.

  5. Transfer onto a plate and keep warm.

Pro Tip: Don’t overcrowd the pan — you want that perfect sear!

Step 3: Make the Ultra-Creamy Cajun Alfredo Sauce

  1. In the same skillet, melt 3 tbsp butter.

  2. Add minced garlic and sauté until fragrant (about 30 seconds).

  3. Stir in heavy cream and chicken broth.

  4. Add the cream cheese and whisk until fully melted and smooth.

  5. Sprinkle in Cajun seasoning, smoked paprika, salt, and black pepper.

  6. Reduce heat to low and mix in Parmesan and mozzarella.

  7. Simmer for 3–5 minutes until the sauce is creamy, thickened, and glossy.

If the sauce becomes too thick, use the reserved pasta water to loosen it.
