CHEESY BROCCOLI BITES

👨‍🍳 INSTRUCTIONS

  1. Prep the broccoli:
    Steam or microwave broccoli until just tender (about 3–4 minutes). Let cool, then finely chop and squeeze out excess moisture.

  2. Mix the filling:
    In a bowl, combine broccoli, cheddar, mozzarella, Parmesan, ½ cup Panko, egg, flour, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined and holds together.

  3. Shape the bites:
    Scoop about 1 tablespoon of mixture and roll into balls or small patties. If you want extra crunch, roll them lightly in additional Panko.

  4. Cook them:

    Fry:
    Heat oil to 175°C / 350°F. Fry in batches for 2–3 minutes, turning until golden brown. Drain on paper towels.

    Bake:
    Preheat oven to 200°C / 400°F. Place bites on a lined baking sheet, spray lightly with oil, and bake for 15–18 minutes, flipping halfway, until golden.

    Air Fry:
    Cook at 190°C / 375°F for 8–10 minutes, shaking or flipping halfway.

  5. Serve:
    Serve hot with ranch, garlic aioli, or marinara for dipping 😋


💡 TIPS & VARIATIONS

  • Swap cheeses: try Monterey Jack, Colby, or a spicy pepper jack 🧀

  • Add-ins: cooked bacon bits or chopped jalapeños = 🔥

  • If mixture feels too wet, add a little more Panko. If too dry, add a teaspoon of milk or another bit of egg.
