Cheesy Bow Tie Chicken
Ingredients:
8 ounces bow tie (farfalle) pasta
1 pound boneless, skinless chicken breasts, cut into 1″ pieces
2 tablespoons olive oil
1 small onion, finely chopped
3 garlic cloves, minced
1 cup heavy cream
1 cup low-sodium chicken broth
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt, to taste
Black pepper, to taste
2 tablespoons chopped fresh parsley
Instructions:
1. Cook the bow tie pasta according to package directions until al dente. Drain and set aside.
2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, paprika, and half the Italian seasoning. Add to the skillet and cook until browned and cooked through, about 5–6 minutes. Remove chicken and set aside.
3. Reduce heat to medium. Add the chopped onion to the same skillet and sauté until translucent, about 3 minutes. Add the garlic and cook 30 seconds more.
4. Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Stir in the remaining Italian seasoning and bring to a gentle simmer.
5. Add the mozzarella and Parmesan cheeses, stirring until melted and the sauce is smooth. Taste and adjust seasoning with salt and pepper.
6. Return the chicken and drained pasta to the skillet. Toss gently to coat everything evenly in the cheesy sauce.
7. Cook for 1–2 minutes more to heat through and allow the sauce to cling to the pasta.
8. Remove from heat, sprinkle with chopped parsley, and serve immediately.
