Cheesy Baked Fajita Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 packet (1 oz) fajita seasoning mix
1 large red bell pepper, sliced
1 large green bell pepper, sliced
1 large yellow bell pepper, sliced
1 large onion, sliced
2 cups shredded Mexican blend cheese
1/2 cup salsa (optional)
Fresh cilantro, chopped (for garnish)
Sour cream (for serving)
Tortillas (optional, for serving)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish with cooking spray or a bit of olive oil.
Season the Chicken:
Place the chicken breasts in a large bowl.
Drizzle with olive oil and sprinkle the fajita seasoning mix over the chicken.
Toss to coat the chicken breasts evenly with the seasoning.
Arrange the Vegetables:
Spread the sliced bell peppers and onion evenly across the bottom of the prepared baking dish.
Place the seasoned chicken breasts on top of the vegetables.
Bake the Chicken and Vegetables:
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Remove the baking dish from the oven.
Add the Cheese:
Sprinkle the shredded Mexican blend cheese evenly over the top of the chicken breasts.
Return the dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove the dish from the oven and let it cool for a few minutes.
If desired, spoon salsa over the chicken for added flavor.
Garnish with fresh cilantro.
Serve with sour cream and tortillas on the side, if desired.
