Fresh, juicy strawberries are hollowed out and filled with a sweet, creamy cheesecake mixture—light, fluffy, and totally irresistible. They’re elegant enough to impress guests, yet so easy you’ll make them again and again.
Ingredients

1 lb fresh strawberries (large strawberries work best)

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

Optional toppings: mini chocolate chips, crushed graham crackers, sprinkles, or lemon zest
Directions
1️⃣ Prep the Strawberries
Wash strawberries and pat dry.
Carefully hull each strawberry (remove the green tops and a small cone of the center) to create a little cavity for the filling.
2️⃣ Make the Cheesecake Filling
In a medium bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
If you like a sweeter or fluffier filling, you can fold in 2 tablespoons of whipped cream.
3️⃣ Fill the Strawberries
Use a piping bag or small spoon to fill each hollowed strawberry with the cheesecake mixture.
Fill generously so the creamy center peaks out of the top.
4️⃣ Garnish
Top with optional mini chocolate chips, crushed graham crackers, sprinkles, or a tiny dusting of lemon zest for a pretty presentation.
5️⃣ Chill & Serve
Place filled strawberries on a tray and refrigerate for at least 30 minutes to firm up.
