Cheese Tortellini Pepperoni Pizza Casserole
Ingredients:
1 (20 oz) package cheese tortellini (fresh or frozen)
1 1/2 cups pizza sauce (or marinara sauce)
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup pepperoni slices
1/2 cup sliced black olives (optional)
1/2 cup diced bell peppers (optional)
1/2 tsp garlic powder
1/2 tsp Italian seasoning
1/4 tsp red pepper flakes (optional)
Fresh basil or parsley for garnish
Directions:
Cook the Tortellini:
Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions (typically 2-3 minutes if using fresh, or 5-7 minutes for frozen), until they are tender. Drain and set aside.
Prepare the Casserole Base:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large mixing bowl, combine the cooked tortellini, pizza sauce, garlic powder, Italian seasoning, and half of the shredded mozzarella. Gently toss until the tortellini is coated in the sauce.
Assemble the Casserole:
Pour the tortellini mixture into the prepared baking dish. Spread it out evenly. Top with the remaining shredded mozzarella and the grated Parmesan.
Arrange pepperoni slices over the top of the casserole. You can add optional toppings like sliced olives and diced bell peppers for extra flavor and texture.
Bake the Casserole:
Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
Serve:
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley, and a sprinkle of red pepper flakes if you like extra heat. Serve warm.
