Cattle Drive Casserole

Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 (15 oz) can of black beans, drained and rinsed
1 (15 oz) can of corn, drained
1 (10 oz) can diced tomatoes with green chilies
1 (1 oz) packet taco seasoning
2 cups cooked rice (white or brown)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
½ cup sour cream
1 cup tortilla chips, crushed (for topping)
Optional: Chopped fresh cilantro for garnish

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Ground Beef:
In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant. Drain any excess grease.
Mix the Ingredients:
In the skillet with the cooked beef, stir in the black beans, corn, diced tomatoes with green chilies, and taco seasoning. Mix well to combine and heat through for about 3-4 minutes.
Combine with Rice:
In a large bowl, combine the cooked rice and sour cream, mixing until well blended. Then, add the beef mixture to the rice and stir until everything is evenly incorporated.
Assemble the Casserole:
Pour the mixture into a greased 9×13-inch baking dish. Spread it evenly and top with the shredded cheddar and Monterey Jack cheeses.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Add Topping:
Remove the casserole from the oven and sprinkle the crushed tortilla chips on top. Return it to the oven for an additional 5-10 minutes until the chips are slightly golden and crispy.
Serve:
