Caramel Puff Corn

Ingredients:

1 (8-ounce) bag puff corn
1 cup butter (do not substitute)
1 cup brown sugar
½ cup light corn syrup
1 teaspoon baking soda

Instructions:

1. Preheat your oven to 250°F (120°C).

2. Place the puff corn in a large roasting pan.

3. In a 2-quart saucepan, combine the butter, brown sugar, and corn syrup. Bring the mixture to a boil over medium heat, stirring constantly. Once boiling, continue to cook for 2 minutes.

4. Remove the saucepan from heat and stir in the baking soda. The mixture will foam up.

5. Pour the caramel mixture over the puff corn in the roasting pan. Stir well to coat all pieces evenly.

6. Bake the caramel-coated puff corn in the preheated oven for 45 minutes, stirring every 10 to 15 minutes to ensure even coating.

7. After baking, remove the puff corn from the oven and spread it out onto wax paper to cool. Once cooled, break into pieces and store in an airtight container.
