CARAMEL APPLE FRUIT CAKE

INGREDIENTS
For the Cake:
1½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
½ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream or Greek yogurt
2 medium apples, peeled and chopped
½ cup chopped pecans or walnuts (plus extra for topping)

For the Caramel Sauce:
½ cup brown sugar
¼ cup unsalted butter
2 tbsp heavy cream
Pinch of salt
½ tsp vanilla extract

INSTRUCTIONS
1. Make the Caramel Sauce:
In a small saucepan over medium heat, melt butter and brown sugar together.
Stir in heavy cream and salt, bring to a gentle boil, and simmer for 2–3 minutes.
Remove from heat, stir in vanilla, and let it cool slightly.

2. Prepare the Cake Batter:
1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round or loaf cake pan.
2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
3. In another large bowl, cream butter with both sugars until light and fluffy.
4. Beat in eggs one at a time, then add vanilla.
5. Mix in sour cream, then gradually add dry ingredients.
6. Fold in chopped apples and pecans.

3. Bake:
Pour batter into prepared pan.
Bake for 45–55 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack.

4. Finish and Decorate:
Pour caramel sauce over cooled cake.
Garnish with fresh apple slices, more pecans, and a sprinkle of crumble if desired.
