Ingredients:
4 white fish fillets (cod, haddock, or tilapia)
1 cup all-purpose flour
½ cup cornstarch
1 tsp baking powder
1 tsp salt
½ tsp paprika
¼ tsp garlic powder
¼ tsp black pepper
1 cup cold club soda (or sparkling water)
1 egg, beaten
Vegetable oil for frying
Lemon wedges (optional, for serving)
Tartar sauce (optional, for serving)

Directions:
Prepare the Batter:
In a large bowl, combine the flour, cornstarch, baking powder, salt, paprika, garlic powder, and black pepper. Whisk until well combined.
In a separate bowl, whisk together the cold club soda and beaten egg. Gradually pour the wet ingredients into the dry mixture, whisking until a smooth batter forms. The batter should have a slightly thick but pourable consistency. Set aside for a few minutes to rest.
Heat the Oil:
In a large deep skillet or fryer, heat about 2-3 inches of vegetable oil over medium-high heat to 350°F (175°C).
Coat the Fish:
Pat the fish fillets dry with paper towels. Lightly coat each fillet in some flour, shaking off any excess.
Dip each floured fillet into the batter, ensuring it is evenly coated.
Fry the Fish:
Carefully place the battered fish fillets into the hot oil. Fry the fish for 3-5 minutes per side, or until the fish is golden brown and crispy, and the internal temperature reaches 145°F (63°C).
Remove the fish from the oil and place it on a paper towel-lined plate to drain excess oil.
