Caprese Stuffed Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 cup fresh mozzarella, sliced
1 cup fresh tomatoes, sliced (Roma or cherry tomatoes work well)
1/4 cup fresh basil leaves
2 tbsp balsamic glaze (optional)
2 tbsp olive oil
2 garlic cloves, minced
1 tsp Italian seasoning
Salt and pepper to taste
Toothpicks (to secure the chicken breasts)

Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare the Chicken:
Slice each chicken breast lengthwise to create a pocket, being careful not to cut all the way through.
Season the inside and outside of each chicken breast with salt, pepper, Italian seasoning, and minced garlic.
Stuff the Chicken:
Stuff each chicken breast with 2-3 slices of fresh mozzarella, a few slices of tomatoes, and a few basil leaves.
Secure the edges of the chicken breast with toothpicks to hold the stuffing inside during cooking.
Sear the Chicken:
Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium heat.
Once hot, add the stuffed chicken breasts and sear for 2-3 minutes on each side until golden brown.
Bake:
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
Optional Glaze:
Drizzle balsamic glaze over the top of the cooked chicken for extra flavor.
Serve:
Let the chicken rest for 5 minutes before serving. Remove the toothpicks and serve with a side of fresh vegetables or a simple salad.
