Caprese Stuffed Avocados Recipe
Ingredients:
2 ripe avocados, halved and pitted
1 cup cherry tomatoes, quartered
1/2 cup fresh mozzarella balls (bocconcini), halved
1/4 cup fresh basil leaves, chopped
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic glaze
Salt and pepper, to taste
Instructions:
Prepare the Avocados:
Scoop out a small portion of the flesh from each avocado half to create a larger cavity for the filling. Chop the scooped-out avocado flesh into small pieces and set aside.
Make the Caprese Filling:
In a medium bowl, combine the cherry tomatoes, mozzarella balls, chopped basil, and the reserved chopped avocado. Drizzle with the extra-virgin olive oil and season with salt and pepper to taste. Gently toss to combine.
Stuff the Avocados:
Spoon the Caprese filling evenly into each avocado half.
Drizzle with Balsamic Glaze:
Drizzle the balsamic glaze over the stuffed avocados.
Serve:
