Cajun Shrimp Delight
Ingredients:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon Cajun seasoning (store-bought or homemade)
1/2 teaspoon smoked paprika (optional for extra smokiness)
3 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon butter
1/4 cup fresh parsley, chopped (for garnish)
Cooked rice or pasta, for serving
Lemon wedges, for serving
For Homemade Cajun Seasoning (optional):
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper (or to taste)
1/4 teaspoon black pepper
1/4 teaspoon salt
Instructions:
1. Season the Shrimp:
In a large bowl, toss the shrimp with olive oil, Cajun seasoning, and smoked paprika (if using) until the shrimp are evenly coated.
2. Cook the Shrimp:
Heat a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side, until they are pink and opaque. Be careful not to overcook the shrimp.
Add the minced garlic during the last minute of cooking and stir to combine, letting the garlic become fragrant.
3. Add Butter and Lemon Juice:
Once the shrimp are cooked, reduce the heat to low and add the butter and lemon juice. Stir until the butter is melted and the shrimp are coated in the sauce.
4. Garnish and Serve:
Remove the skillet from the heat and garnish the shrimp with fresh parsley. Serve immediately over rice or pasta with lemon wedges on the side for squeezing over the top.
