Cajun Chicken Sloppy Joes
Ingredients:
1 lb ground chicken
1 tablespoon olive oil
1 small onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
2 tablespoons Cajun seasoning (adjust to taste)
1 can (15 oz) tomato sauce
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon hot sauce (optional, for extra heat)
4 burger buns or sandwich rolls
2 tablespoons butter (for toasting buns)
Optional toppings: shredded lettuce, pickles, or coleslaw
Directions:
Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook, breaking it apart with a spatula until it’s browned and cooked through, about 5-7 minutes.
Sauté Vegetables:
Add the diced onion, green bell pepper, and minced garlic to the skillet. Cook for another 3-4 minutes until the vegetables are softened.
Season and Simmer:
Stir in the Cajun seasoning, making sure everything is evenly coated. Add the tomato sauce, ketchup, Worcestershire sauce, brown sugar, and hot sauce. Stir to combine, then let the mixture simmer on low heat for 10-12 minutes, allowing the flavors to blend and thicken.
Toast the Buns:
While the sloppy joe mixture is simmering, butter the burger buns or sandwich rolls. Toast them in a separate pan over medium heat until golden and crispy.
Assemble and Serve:
Spoon the Cajun chicken mixture onto the toasted buns. Top with optional toppings like shredded lettuce, pickles, or coleslaw for added crunch and flavor.
