Cabbage Soup
Ingredients:
1 medium head of cabbage, chopped
1 large onion, diced
3 carrots, sliced
3 celery stalks, chopped
4 cups vegetable broth (or chicken broth)
2 cans (14.5 oz each) diced tomatoes
1 green bell pepper, chopped
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
1/2 teaspoon salt (or to taste)
2 tablespoons olive oil
Optional: 1 teaspoon red pepper flakes for a spicy kick
Directions:
Prepare the Vegetables:
Heat olive oil in a large pot over medium heat.
Add the diced onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
Add Garlic and Spices:
Stir in the minced garlic, dried oregano, dried basil, black pepper, and salt.
Cook for another minute until the garlic is fragrant.
Add Remaining Ingredients:
Add the chopped cabbage, green bell pepper, diced tomatoes (with their juice), and vegetable broth.
If you want a bit of heat, stir in the red pepper flakes.
Bring to a Boil:
Increase the heat to high and bring the soup to a boil.
Simmer:
Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, or until the cabbage is tender.
Adjust Seasoning and Serve:
Taste the soup and adjust the seasoning as needed.
