Butternut Squash Fritters
Ingredients:
2 cups grated butternut squash (about half a medium squash)
1/4 cup grated onion
2 large eggs, beaten
1/2 cup all-purpose flour (or gluten-free flour)
1/4 cup grated Parmesan cheese (optional)
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg (optional, for added warmth)
Olive oil or vegetable oil, for frying
Instructions:
1. Prepare the Squash:
Peel and grate the butternut squash using a box grater or a food processor. Place the grated squash in a clean kitchen towel and squeeze out excess moisture. This helps the fritters become crispier.
2. Combine Ingredients:
In a large mixing bowl, combine the grated squash, grated onion, beaten eggs, flour, Parmesan cheese (if using), garlic powder, salt, pepper, and nutmeg. Mix until well combined.
3. Heat the Oil:
Heat about 2 tablespoons of oil in a large skillet over medium heat.
4. Fry the Fritters:
Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly with a spatula. Cook the fritters for 3-4 minutes per side or until golden brown and crispy. Work in batches, adding more oil as needed.
5. Drain and Serve:
Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil. Serve warm.
