🍫🥜 Buckeye Brownie Cookies 🍪
Combining the best of brownies and buckeyes, these cookies are a chocolate-peanut butter lover’s dream.
Ingredients:
Cookies:
1 box fudge brownie mix (19.5 oz or family size)
¼ cup butter (melted)
4 oz cream cheese (softened)
1 large egg
Peanut Butter Filling:
1 cup powdered sugar
1 cup creamy peanut butter
Topping:
4 oz semi-sweet chocolate chips
Directions:
Prepare Cookie Dough:
Heat oven to 350°F.
In a medium bowl, beat together brownie mix, melted butter, softened cream cheese, and egg until dough forms. The dough will be sticky.
Scoop dough onto an ungreased cookie sheet, forming about 24 cookies. Smooth edges to form round cookies.
Prepare Peanut Butter Filling:
In a separate bowl, mix powdered sugar and peanut butter until completely combined.
Form the mixture into 1-inch balls. Ensure you have one ball for each cookie.
Bake Cookies:
Bake cookies for 12 minutes, ensuring not to overcook or undercook them.
As soon as cookies come out of the oven, press a peanut butter ball lightly into the center of each cookie. Let cool for 5 minutes, then transfer to a wire rack to cool completely.
Top with Chocolate:
Melt chocolate chips in a microwavable bowl for 30 seconds. Stir and microwave for additional 15 seconds until fully melted.
Spoon about ½ tablespoon of melted chocolate over each cookie to cover the peanut butter ball.
Let the chocolate set before serving.
