Buckeye Bars Recipe
Ingredients:
Peanut Butter Layer:
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups creamy peanut butter
2 cups powdered sugar
2 cups graham cracker crumbs
Chocolate Layer:
2 cups semi-sweet chocolate chips
1/4 cup creamy peanut butter
Instructions:
Prepare the Pan:
Line a 9×13-inch baking dish with parchment paper or foil, leaving some overhang for easy removal. Lightly grease the lining.
Make the Peanut Butter Layer:
In a large mixing bowl, beat the softened butter and peanut butter until creamy and smooth.
Add powdered sugar and graham cracker crumbs; mix until fully combined.
Press the mixture evenly into the prepared baking dish, smoothing the top with a spatula.
Prepare the Chocolate Layer:
In a microwave-safe bowl, combine the chocolate chips and peanut butter. Heat in 30-second intervals, stirring in between, until melted and smooth.
Pour the chocolate mixture over the peanut butter layer, spreading it evenly with a spatula.
Chill:
Place the dish in the refrigerator and chill for at least 2 hours, or until fully set.
Slice and Serve:
Use the parchment or foil overhang to lift the bars out of the pan.
Cut into squares or rectangles to serve.
