Broccoli, Rice, Cheese, and Chicken Casserole

Ingredients:
2 cups cooked chicken breast, shredded or diced
2 cups cooked rice (white or brown)
3 cups broccoli florets, steamed or lightly cooked
1 can (10.5 oz) cream of chicken soup (or homemade equivalent)
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 cups shredded cheddar cheese, divided
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
1/4 cup breadcrumbs (optional)
2 tablespoons butter, melted (optional)

Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
Cook the Rice and Broccoli:
Prepare 2 cups of rice according to the package instructions. Set aside.
Steam or lightly cook the broccoli florets until tender but still bright green. Set aside.
Mix the Casserole Ingredients:
In a large mixing bowl, combine the cooked chicken, cooked rice, steamed broccoli, cream of chicken soup, sour cream, mayonnaise, 1 cup of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
Assemble the Casserole:
Pour the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
Add Topping (Optional):
If you like a crunchy topping, mix the breadcrumbs with the melted butter in a small bowl, then sprinkle the mixture evenly over the top of the casserole.
Bake:
Place the casserole in the preheated oven and bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
Serve:
Remove the casserole from the oven and let it cool for a few minutes before serving. Enjoy it hot as a comforting, cheesy meal!
