Broccoli Chicken Divan
Ingredients:
4 cups cooked chicken (shredded or cubed)
4 cups broccoli florets (fresh or frozen)
1 cup cooked rice (optional)
For the cheese sauce:
1/2 cup butter
1/2 cup all-purpose flour
2 cups chicken broth
1 cup milk
2 cups shredded cheddar cheese (divided)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1/2 tsp Dijon mustard (optional)
For topping:
1 cup breadcrumbs (or crushed crackers)
2 tbsp melted butter
1/2 cup grated Parmesan cheese (optional)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C).
Prepare the broccoli:
If using fresh broccoli, steam or blanch the florets until tender (about 3-4 minutes). If using frozen, cook according to package instructions and drain.
Make the cheese sauce:
In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for about 1-2 minutes until bubbly.
Gradually whisk in the chicken broth and milk, stirring continuously until the sauce thickens (about 5-7 minutes).
Remove from heat and stir in 1 1/2 cups of cheddar cheese, garlic powder, onion powder, salt, pepper, and Dijon mustard (if using) until the cheese is melted and the sauce is smooth.
Combine the ingredients:
In a large mixing bowl, combine the cooked chicken, broccoli, and cooked rice (if using). Pour the cheese sauce over the mixture and stir until well combined.
Transfer to baking dish:
Pour the chicken and broccoli mixture into a greased 9×13 inch baking dish. Spread evenly.
Prepare the topping:
In a small bowl, mix the breadcrumbs with melted butter. Sprinkle the breadcrumb mixture evenly over the top of the casserole. If desired, sprinkle grated Parmesan cheese on top as well.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is heated through.
Serve:
