Broccoli Cheese Patties

Ingredients:
2 cups broccoli florets (steamed and finely chopped)
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
1 cup breadcrumbs (preferably Panko)
2 large eggs
2 cloves garlic (minced)
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil (for frying)
Optional: sour cream or ranch dressing for dipping

Directions:
Steam and Prep Broccoli:
Steam the broccoli florets for about 4-5 minutes, or until tender. Drain and finely chop the steamed broccoli into small pieces.
Mix Ingredients:
In a large bowl, combine the chopped broccoli, shredded cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic, onion powder, salt, and black pepper. Stir until everything is evenly mixed and the mixture holds together.
Shape the Patties:
Using your hands, form the mixture into small patties, about 2-3 inches in diameter and ½ inch thick. This recipe should yield around 8-10 patties.
Cook the Patties:
Heat the olive oil in a large skillet over medium heat. Once hot, add the broccoli cheese patties to the pan in batches. Cook for about 3-4 minutes per side, or until golden brown and crispy on the outside. Be sure not to overcrowd the skillet.
