Breakfast Grilled Cheese with Eggs 🍳🧀🥪✨
Buttery grilled sourdough filled with eggs, cheese, and sausage. A hearty, flavorful breakfast sandwich!

Ingredients:
½ pound ground breakfast sausage
6 large eggs, beaten
8 slices Colby-Jack cheese
4 tablespoons soft butter, divided
8 slices sourdough bread

Instructions:
1. In a large non-stick skillet, cook and crumble the sausage over medium heat until browned and no longer pink. Transfer to a paper towel-lined bowl and set aside. Wipe the skillet clean.
2. Melt 2 tablespoons of butter in the same skillet over medium-high heat. Pour in the beaten eggs and cook, stirring gently, until just set. Remove from heat.
3. Remove the paper towel from the bowl with the sausage, then add the scrambled eggs and mix gently to combine. Wipe the skillet again and return to medium heat.
4. Butter one side of each bread slice. Place one slice, butter-side down, in the skillet. Top with a slice of cheese, ½ cup of the egg-sausage mixture, another slice of cheese, and a second slice of bread, butter-side up.
5. Grill the sandwich for 3–4 minutes per side, or until golden brown and the cheese is melted. Flip carefully.
6. Remove, slice in half if desired, and repeat with the remaining ingredients. Serve immediately.
