Breakfast Burritos
Ingredients:
6 large eggs
½ cup milk
Salt and pepper (to taste)
1 tbsp butter
1 cup shredded cheddar cheese
6 flour tortillas (8-inch)
6 slices of bacon or ½ lb sausage (cooked and crumbled)
1 cup diced potatoes (optional)
½ cup salsa (optional)
¼ cup sour cream (optional)
Hot sauce (optional)
Directions:
Cook the Potatoes (Optional):
If using diced potatoes, cook them in a skillet over medium heat with a little oil until crispy and golden brown. Season with salt and pepper. Set aside.
Scramble the Eggs:
In a bowl, whisk the eggs, milk, salt, and pepper until well combined.
In a large skillet, melt butter over medium heat, then add the egg mixture.
Cook the eggs, stirring frequently, until they are fully scrambled and cooked through. Remove from heat.
Prepare Tortillas:
Warm the tortillas in the microwave or on a skillet for about 30 seconds to make them easier to roll.
Assemble the Burritos:
Lay a tortilla flat and add an equal portion of scrambled eggs to the center of each tortilla.
Top with cooked bacon or crumbled sausage, shredded cheddar cheese, potatoes (if using), and any other desired toppings such as salsa, sour cream, or hot sauce.
Fold and Roll:
Fold the sides of the tortilla in, then roll it up tightly from the bottom to make a burrito. Ensure the ends are tucked in to keep the filling secure.
Serve or Store:
Serve immediately, or wrap each burrito in foil for easy storage. To reheat, microwave wrapped burritos for 1-2 minutes or warm them in the oven.
