💜 Blueberry Heaven Cookies
Soft, vibrant cookies bursting with fresh blueberries and topped with sparkly sugar or flaky salt!
🛒 Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup fresh blueberries (plus extra for topping)
1/4 cup freeze-dried blueberries (optional, for bold flavor & color)
Purple gel food coloring (optional)
Coarse sugar or sea salt flakes for topping
👩🍳 Directions
1 Prep Oven & Sheet
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2 Mix Wet Ingredients
Cream the softened butter and sugar together until light and fluffy.
Beat in egg and vanilla until fully combined.
3 Combine Dry Ingredients
In a separate bowl, whisk flour, baking soda, and salt. Gradually add this to the wet mixture.
4 Add Blueberries & Color
Gently fold in the fresh and freeze-dried blueberries. Add food coloring for a deeper hue if desired.
5 Scoop & Decorate
Scoop out 2-tbsp portions of dough and place them 2 inches apart on your baking sheet.
Top each with a couple of blueberries and a sprinkle of coarse sugar or salt.
6 Bake
Bake for 10–12 minutes, until edges are set but centers remain soft.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
