Blueberry Biscuits Recipe

Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cubed
3/4 cup buttermilk (or whole milk)
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
1 tablespoon lemon zest (optional)
For the Glaze:
1 cup powdered sugar
2-3 tablespoons milk or cream
1/2 teaspoon vanilla extract

Instructions:
Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare the Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
Cut in the Butter:
Add the cold cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
Add the Wet Ingredients:
Stir in the buttermilk and vanilla extract until just combined. Be careful not to overmix.
Fold in the Blueberries:
Gently fold in the blueberries and lemon zest (if using), being careful not to crush the berries.
Shape the Biscuits:
Turn the dough out onto a lightly floured surface and gently pat it to about 1-inch thickness. Use a biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet.
Bake the Biscuits:
Bake for 12-15 minutes, or until the biscuits are golden brown on top.
Prepare the Glaze:
While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Glaze the Biscuits:
Once the biscuits are out of the oven and slightly cooled, drizzle the glaze over the top.
Serve:
Serve warm and enjoy your delicious blueberry biscuits!
