💙 Blue Velvet Cake 🎂
Stunning blue velvet cake with rich cream cheese frosting and fresh blueberries for an elegant touch!
Ingredients:
For the Cake:
1 ¾ cups all-purpose flour
2 Tbsp natural cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, softened
1 cup + 2 Tbsp granulated sugar
2 eggs
3/4 cup sour cream
1 ½ tsp vanilla extract
1/2 tsp vinegar
1/2 cup buttermilk
1 Tbsp blue food coloring
1/2 tsp violet food coloring
For the Cream Cheese Frosting:
10 Tbsp unsalted butter, room temperature
10 oz cream cheese
1 ½ tsp vanilla extract
1/4 tsp almond extract
5 cups powdered sugar
Fresh blueberries for layering and decoration
Directions:
Prepare Your Pans:
Preheat oven to 350°F (175°C).
Line four 6-inch round cake pans with parchment paper and spray with nonstick spray.
Mix Dry Ingredients:
In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
Cream Butter and Sugar:
In a larger bowl, cream softened butter and granulated sugar until light and fluffy.
Beat in eggs one at a time, then add sour cream, vanilla, and vinegar.
Combine Ingredients:
Gradually add dry ingredients to wet mixture, alternating with buttermilk.
Stir in blue and violet food colorings until the desired color is achieved.
Bake:
Divide batter evenly among prepared pans.
Bake for 25-27 minutes, or until a toothpick inserted into the center comes out clean.
Let cakes cool completely in pans.
Prepare the Frosting:
Beat together butter, cream cheese, vanilla, and almond extracts until smooth.
Gradually add powdered sugar until creamy and spreadable.
Assemble the Cake:
Place one cake layer on a serving plate and spread with frosting.
Sprinkle fresh blueberries over the frosting before adding the next layer.
Repeat with remaining layers.
Optionally, coat the sides of the cake with frosting and press cake crumbs into the sides.
Garnish with additional blueberries.
