Blackberry Dumplings
Ingredients:
For the Blackberry Filling:
4 cups fresh or frozen blackberries
1 cup granulated sugar
1 cup water
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Dumplings:
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
3/4 cup milk
Directions:
Prepare the Blackberry Filling:
In a large saucepan, combine the blackberries, sugar, water, and lemon juice.
Bring the mixture to a boil over medium-high heat, stirring occasionally.
Reduce the heat to medium-low and simmer for about 5-7 minutes, until the blackberries are soft and the mixture has thickened slightly.
Stir in the vanilla extract and remove from heat. Set aside.
Make the Dumplings:
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add the milk, stirring just until a soft dough forms.
Cook the Dumplings:
Bring the blackberry mixture back to a gentle simmer over medium heat.
Drop spoonfuls of the dumpling dough onto the simmering blackberry mixture. Make sure to space them evenly.
Cover the saucepan with a lid and cook for about 15-20 minutes, until the dumplings are cooked through and have absorbed some of the blackberry juices. Avoid lifting the lid during the cooking process to ensure the dumplings steam properly.
Serve and Enjoy:
Serve the blackberry dumplings warm, either on their own or with a scoop of vanilla ice cream or a dollop of whipped cream.
