Blackberry Cobbler

Ingredients:
For the Filling:
4 cups fresh or frozen blackberries
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
For the Topping:
1 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup brown sugar, packed
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/2 cup buttermilk (or milk with a splash of lemon juice)
1 large egg

Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Blackberry Filling:
In a large bowl, toss the blackberries with the granulated sugar, cornstarch, lemon juice, vanilla extract, and salt. Spread the mixture evenly in a greased 9×13-inch baking dish or an equivalent oven-safe dish.
Prepare the Cobbler Topping:
In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Stir in the buttermilk and egg until just combined. The batter will be thick.
Assemble the Cobbler:
Drop spoonfuls of the topping over the blackberry filling, covering as much of the surface as possible. It’s okay if some of the filling peeks through.
Bake:
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve:
Allow the cobbler to cool slightly before serving. Serve warm or at room temperature, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.
