Step-by-Step Instructions

1. Preparing the Chocolate Crust

  1. Preheat your oven to 350°F (175°C).

  2. In a medium bowl, combine chocolate cookie crumbs, sugar, melted butter, and a pinch of salt. Mix until evenly moistened.

  3. Press the mixture firmly into the bottom of a 9-inch springform pan. For an even crust, use the bottom of a glass or measuring cup to press firmly.

  4. Bake for 10 minutes, then remove from oven and let cool. This ensures a crisp, sturdy base that supports the cheesecake filling.


2. Making the Cheesecake Filling

  1. In a large mixing bowl, beat the cream cheese until smooth using an electric mixer.

  2. Gradually add sugar and continue beating until creamy and lump-free.

  3. Beat in sour cream and vanilla extract until fully incorporated.

  4. Add eggs one at a time, mixing on low speed. Overmixing can introduce air, causing cracks.

  5. If desired, fold in chocolate chips or a swirl of melted chocolate.

Tip: For a perfectly smooth cheesecake, scrape down the bowl frequently to ensure all ingredients are well blended.


3. Assembling the Cheesecake

  1. Pour half of the cheesecake filling over the cooled chocolate crust.

  3. Pour the remaining cheesecake filling on top and smooth with a spatula.

4. Baking the Cheesecake

  1. Preheat oven to 325°F (160°C).
