Ingredients
Pickled Red Onions

3/4 cup distilled white vinegar

3 tbsp sugar

1/8 tsp salt

1 medium red onion, thinly sliced
Salad

1 lb cooked shrimp, peeled and deveined

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen & thawed, or canned)

1 red bell pepper, diced
-
1/4 cup chopped fresh cilantro

Juice of 1 lime

1-2 tbsp olive oil

Salt & pepper, to taste
Directions
1️⃣ Pickle the Onions
In a small saucepan, combine vinegar, sugar, and salt. Heat until sugar dissolves.
Place sliced onions in a jar or bowl and pour hot vinegar mixture over them. Let cool to room temperature, then refrigerate for at least 15 minutes (longer for more tang).
2️⃣ Prepare the Salad
In a large bowl, combine shrimp, black beans, corn, red bell pepper, and cilantro.
3️⃣ Dress the Salad
Drizzle with lime juice and olive oil. Season with salt and pepper to taste. Toss gently to combine.
4️⃣ Add Pickled Onions
Drain onions from pickling liquid and scatter over the salad. Toss lightly again before serving.
5️⃣ Serve
Serve chilled or at room temperature. Great on its own, over greens, or with tortilla chips on the side.
