Biscuits and Sausage Gravy Breakfast Pizza Recipe

Ingredients:
For the Pizza Crust:
1 can (16.3 oz) refrigerated biscuit dough (or homemade pizza dough)
1 tablespoon olive oil (if using homemade dough)
For the Sausage Gravy:
1/2 lb breakfast sausage (bulk, not in casings)
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional, for a bit of heat)
For the Pizza Topping:
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 large eggs
Freshly ground black pepper, to taste
Chopped fresh parsley or chives for garnish (optional)

Directions:
Prepare the Sausage Gravy:
In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Break it into small pieces as it cooks. Remove sausage from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until it forms a roux (a thick paste).
Gradually whisk in the milk and cook, stirring constantly, until the mixture thickens and starts to bubble, about 3-5 minutes.
Stir in the cooked sausage, salt, pepper, and red pepper flakes (if using). Reduce heat to low and simmer while you prepare the pizza.
Prepare the Pizza Crust:
If using refrigerated biscuit dough, press each biscuit out flat to form a pizza crust. Arrange the dough on a greased pizza pan or baking sheet, pressing together as needed to cover the surface. If using homemade dough, roll out to fit the pan and brush with olive oil.
Preheat the oven to 375°F (190°C).
Assemble the Pizza:
Spread the sausage gravy evenly over the biscuit dough, leaving a small border around the edges.
Sprinkle the shredded cheddar and mozzarella cheeses evenly over the gravy.
Carefully crack the eggs on top of the cheese, making sure to space them out so that they don’t touch. You can lightly beat the eggs if you prefer a more uniform appearance.
Bake:
Place the pizza in the preheated oven and bake for 15-20 minutes, or until the biscuit dough is cooked through, the cheese is melted and bubbly, and the eggs are cooked to your desired level of doneness (yolk should be set but still a bit runny is ideal for breakfast pizza).
Garnish and Serve:
Once baked, remove the pizza from the oven. Season with freshly ground black pepper and garnish with chopped parsley or chives if desired.
Allow the pizza to cool for a few minutes before slicing into wedges.
