Tender beef, hearty veggies, and bold flavors make this the perfect comfort food!

• 2 pounds beef stew meat
• ½ cup all-purpose flour
• 1 tbsp seasoning salt
• 2 tbsp olive oil
• ½ tsp black pepper
• 1 large onion, diced
• 2 bay leaves
• ¼ cup Worcestershire sauce
• 4 cups beef broth
• 4 large carrots, peeled and sliced
• 3 large potatoes, peeled and cubed
• 2 stalks celery, sliced
• 3 cloves garlic, minced
• 1 tsp dried thyme
• 1 tsp paprika
• Salt and pepper to taste

In a large bowl, toss the beef stew meat with flour, seasoning salt, and black pepper until well coated.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef in batches and sear until browned on all sides. Remove and set aside.

In the same pot, add the diced onion and sauté until softened. Stir in the minced garlic and cook for another 1-2 minutes.

Return the beef to the pot. Add Worcestershire sauce, beef broth, bay leaves, thyme, paprika, and a pinch of salt and pepper. Stir well, cover, and bring to a boil. Reduce heat to low and let simmer for 1 hour.

Stir in carrots, potatoes, and celery. Cover and simmer for another 45 minutes to 1 hour, or until the vegetables are tender and the stew has thickened.

Taste the stew and adjust the seasoning with salt and pepper as needed.

Remove bay leaves before serving. Ladle the stew into bowls and serve with crusty bread or over rice for a hearty meal.
Enjoy this warm and comforting dish!
