🍓 Berrylicious Strawberry Crunch Cheesecake
🧂 Ingredients:
2 cups crushed graham crackers
½ cup melted butter
2 cups whipped cream
1 cup cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract

Prepare the crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Stir until all the crumbs are coated in butter, and the mixture sticks together. Press the mixture into the bottom of a springform pan or pie dish to form a firm crust. Set aside to chill in the refrigerator for 20-30 minutes to set.
Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
Fold in the whipped cream: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream. The mixture should be light and fluffy.
Assemble the cheesecake: Pour the cheesecake filling over the chilled graham cracker crust. Smooth the top with a spatula to evenly distribute the filling.
Add the crunch: To create the strawberry crunch topping, use the remaining crushed graham crackers (if you like, you can add freeze-dried strawberries for an extra burst of flavor) and sprinkle them generously over the top of the cheesecake.
Chill and serve: Place the cheesecake in the refrigerator for at least 4 hours or overnight to let it set and firm up. Once ready, slice and enjoy!
