Beef Tips and Noodles

Ingredients:
1 lb beef stew meat or sirloin tips, cut into bite-sized pieces
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 cup beef broth
1 (10.5 oz) can cream of mushroom soup (or homemade mushroom gravy)
1 tbsp Worcestershire sauce
1 tsp dried thyme (or 1 tbsp fresh)
Salt and pepper to taste
1 tbsp cornstarch (optional, for thickening)
1/2 cup sour cream (optional, for creaminess)
4 cups egg noodles (or your preferred pasta)

Instructions:
Brown the Beef:
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add the beef tips and cook for about 4-5 minutes, browning them on all sides. Remove the beef from the pan and set aside.
Sauté the Vegetables:
In the same pan, add the chopped onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for an additional minute until fragrant.
Make the Sauce:
Add the beef broth, cream of mushroom soup, Worcestershire sauce, and thyme to the pan. Stir everything together and bring the mixture to a simmer.
Season with salt and pepper to taste.
If the sauce needs thickening, mix the cornstarch with a little water to create a slurry and stir it into the sauce. Let it simmer for another 5 minutes, stirring occasionally.
Cook the Beef:
Return the browned beef to the pan and stir to coat. Cover and simmer on low heat for 30-40 minutes, allowing the beef to become tender and absorb the flavors.
Cook the Noodles:
While the beef is simmering, cook the egg noodles according to package instructions. Drain and set aside.
Finish the Dish:
Once the beef is tender and the sauce has thickened, stir in the sour cream (if using) for added creaminess.
Adjust seasoning if needed.
Serve:
Serve the beef tips and gravy over a bed of cooked egg noodles. Garnish with fresh parsley if desired.
