Ingredients
-
2 beef steaks (ribeye or sirloin, about 8 oz each)
-
2 large eggs
-
1 tablespoon olive oil
-
Salt and black pepper, to taste
Directions
1️⃣ Prepare the Steaks
Remove the steaks from the refrigerator 20 minutes before cooking to allow them to come to room temperature. Pat dry with paper towels and season generously on both sides with salt and black pepper.
2️⃣ Sear the Steak
Heat the olive oil in a heavy skillet (preferably cast iron) over medium-high heat.
Once hot, add the steaks and sear for 3–4 minutes per side for medium-rare, or cook to your preferred doneness.
Transfer steaks to a plate and loosely tent with foil. Let them rest while you cook the eggs—this keeps the steak juicy and tender.
3️⃣ Cook the Eggs
Using the same skillet, reduce heat to medium. Crack the eggs directly into the pan.
Cook sunny-side up, over-easy, or to your liking, seasoning lightly with salt and pepper.
4️⃣ Serve
Place each steak on a plate and top or serve alongside the eggs. Spoon any pan juices over the steak for extra flavor and serve immediately.
