Beef Meximelt
Ingredients:
1 lb (450g) ground beef
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 packet (1 oz) taco seasoning
1 cup salsa
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup sour cream
4 large flour tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped fresh cilantro (optional)
Salt and black pepper to taste
Directions:
Cook the Beef:
In a large skillet over medium heat, cook the ground beef until browned and crumbled. Drain excess fat if necessary.
Add Vegetables:
Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are softened, about 4-5 minutes.
Season the Beef:
Stir in the taco seasoning and salsa. Simmer for 5 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
Assemble the Meximelts:
Preheat your oven to 375°F (190°C). Place the tortillas on a baking sheet. Evenly distribute the beef mixture over each tortilla.
Add Cheese:
Sprinkle the shredded cheddar and Monterey Jack cheese on top of the beef mixture.
Bake:
Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove from the oven and top with shredded lettuce, diced tomatoes, and a dollop of sour cream. Sprinkle with chopped fresh cilantro if desired. Serve hot.
