Beef Lombardi Casserole
A rich, layered ground beef and noodle casserole topped with creamy cheese — old-school comfort food at its best!

Ingredients:
1 lb ground beef

1 small onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes

1 can (6 oz) tomato paste

1 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

8 oz egg noodles (or elbow macaroni), cooked and drained

1 cup sour cream

4 oz cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

2 tbsp chopped parsley (optional, for garnish)

Instructions:
Preheat oven to 350°F (175°C).

Brown the beef:
In a large skillet over medium heat, cook the ground beef with chopped onion until beef is browned and onion is soft. Add garlic and cook another minute.

Make the sauce:
Stir in diced tomatoes, tomato paste, Italian seasoning, salt, and pepper. Simmer for 10 minutes, stirring occasionally.

Mix the creamy layer:
In a separate bowl, combine sour cream and softened cream cheese. Mix until smooth.

Assemble the casserole:
In a greased 9×13-inch baking dish, layer as follows:

Half the cooked noodles

Half the sour cream mixture

Half the beef sauce

Repeat the layers

Top with cheese:
Sprinkle cheddar and mozzarella evenly over the top.

Bake:
Bake uncovered for 25–30 minutes, or until cheese is melted and bubbly.

Garnish and serve:
Let it rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.

💡 Tips:
You can prep this casserole a day ahead and bake it when ready.

Substitute ground turkey or Italian sausage for the beef if desired.

Add chopped bell peppers or mushrooms to the meat sauce for extra flavor and texture.
